I couldn't find a gluten-free bread I actually wanted to eat. After going gluten-free, I was disappointed by how many options felt like a compromise- overly processed, not real sourdough, or just not good. So I started making my own. What began as a personal solution turned into Bella Bread: slow-fermented, gluten-free sourdough made to my exact standards, with simple ingredients and nothing I wouldn't eat myself. This is bread I eat every single day and truly love- because the flavor and texture are exactly what I was missing.
